Carrot Kheer is delicious and healthy sweet. I have already share one more carrot kheer recipe. In this kheer, we get to taste grated carrot. This kheer require less ingredients and even it takes less time to prepare kheer.
Ingredients:
Grated carrot - 2 cups
Milk - 3 cups
Sugar - 1/2 cup
Ghee - 1 tbsp
Cashew - 10
Raisins - 10
Saffron - 5 strands
Method:
Step 1 : In a pan, add 1/2 tbsp ghee and fry cashews and raisins to golden brown and set aside. Soak saffron strands in a 3 tbsp of milk.
Step 2 : In the same pan, add 1/2 tbsp ghee and grated carrot. Saute in low flame for couple of mins until raw carrot smells leaves.
Step 3 : Once raw carrot smells leaves, add 1 cup of milk and allow carrot to cook in milk. Cook till carrot is soft. Switch off stove and allow to cool down.
Step 4 : Using hand blender, blend carrot and milk roughly Or Using mixer grinder, pulse carrot and milk for few seconds. I have used mixer grinder to mix carrot and milk. Carrot should not become paste. This step is optional.
Step 5 : Again keep the carrot milk mixture on low flame and add remaining milk, soaked saffron along with milk. Add sugar and cook for 5 mins. Add fried cashew and raisins into carrot kheer.
Carrot kheer can be served hot or cold.
Note :
1) Blending carrot milk mixture is optional. Blending helps mixing carrot and milk well. Do not over blend it.
2) Koya or Condensed milk can be added to the kheer to enhance the flavor of Carrot Kheer.
