Rava Idly


Rava idly is one of the quick and instant recipe can be prepared for breakfast with less time and ingredients. It is popular breakfast in south India, served along with coconut chutney and vegetable saagu / Aloo saagu.

Ingredients:

Rava/Sooji/Semolina - 2 cup
Sour Curd - 1 cup
Water - 1 cup

Oil - 3 tbsp
Mustard Seeds - 1 tsp
Urad dal (Uddina bele ) - 2 tsp
Channa dal (Kadle bele) - 2 tsp
Cashews - 1 tbsp (optional)
Finely chopped Ginger - 2 tsp
Finely chopped green chillies - 2 tbsp
Curry leaves - 2 tbsp
Finely chopped Coriander leaves - 2 tbsp
Grated carrot - 1 cup (optional)
Hing - pinch

Plain Eno fruit salt - 2 tsp
Lemon juice - 1/2 tsp
Salt - As needed

For decoration on rava idly, grated carrot, roasted Cashews, finely chopped coriander leaves can be used. Just place one roasted cashew and little grated carrot in idly mould before pouring batter into it.

Method:

Step 1: Add oil into the heated kadai. Once oil is heated, add mustard seeds to splutter. Add channa dal, Urad dal, finely chopped ginger, green chillies, Hing. Once its roasted, add grated carrot along with curry leaves and coriander leaves and fry for maximum 2 to 3 mins. Then add sooji into and fry in a low flame for 3 to 4 mins. Don’t over fry or roast like preparing Upma or Uppittu.

Step 2: Allow to cool down. Once it comes to room temperature, then add salt, curd, lemon juice and mix well. Add little water at a time into it and mix well till you get idly batter consistency.

Step 3 : Heat the Idly cooker / pressure cooker with water and allow for steaming. Grease idly plates with oil.

Step 4 : Once the water in cooker starts steaming then add ENO salt to the batter and mix well. Once the ENO salt is mixed well with batter, it starts creating small bubbles and makes batter frothy.

Step 5 : Immediately, pour batter into the idly moulds and steam for 7 to 10 minutes. Don’t use weight whistle if you are using pressure cooker to steam Idlies.

Soft rava idlies are ready to serve along coconut chutney or vegetable saagu.
