Tender Coconut Icecream


Tender coconut Ice cream is not churn and soft ice cream which has fresh tender coconut flesh in every bite. It is easy to prepare and which need less ingredients.

Ingredients :
Cream or whipped cream   – 1 cup
Tender Coconut Water     – 1/2 cup
Condensed Milk           – 1/2 cup
Sugar                    – 1/2 cup
Tender Coconut Flesh     – 1 cup or from 2 coconut

Method:
Step 1 : Chop 1/4th of the tender coconut flesh and transfer into a bowl.
Step 2 : Add sugar, condensed milk, coconut water and 3/4th of the tender coconut flesh in to a blender and puree till smooth. Pour this into a bowl where chopped tender coconut flesh is transferred.
Step 3 : In the same blender, add cream or whipped cream and whip till it reaches peak. Do not over blend the cream. It will take 2 to 3 mins. Even cream can be whipped using hand blender instead of blender.
Step 4 : Transfer whipped cream into a bowl and mix well. Transfer this into a freezer safe container and freeze for minimum 6 to 8 hours.
Scoop tender coconut Ice cream and serve in a ice cream serving bowl.

Note : I personally prefer whipped cream over cream. Since whipped cream makes icecream soft and cream needs to whip a lot. Tender coconut icecream should not be over ripen or thick.
