Spring Onion - Aloo Sandwich

Sandwich is all time favorite for kids and any veggies can be filled in the sandwich. If i want to make my kids to eat vegetables, then sandwich and paratha are the two dishes comes to my mind. Just I need to serve along with tomato ketchup for sandwich and curds for paratha. I had left over Spring Onion-Aloo filling when i prepared for paratha. I am using same filling for making sandwich.

Ingredients:
Finely chopped spring onion - 1 Cup
Boiled Potato               - 1 Large size
Red chilli powder           - 1/2 tsp
Dhania powder               - 1/4 tsp
Jeera                       - 1/4 tsp
Salt to taste
Bread Slices                - 8
Pudina Chutney              - 2 to 3 tbsp
Tomato Ketchup              - 1.5 tbsp
Mayo (optional)             - 1.5 tbsp
Butter to spread on Bread(Optional )
Cheese Slice or Grated cheese (Optional)

Method:
Step 1 : Spring Onion- Aloo Filling
Heat 1 tbsp of oil and saute finely chopped spring onion for 5 mins. Add spices and salt into it and saute well. At the end, add mashed potato into and mix well.

Step 2 : Assembling the sandwich
Take a bread slice, apply thin layer of pudina chutney. In another bread slice, apply thin layer of tomato ketchup and mayo. Take a generous amount of Spring onion - aloo filling in a spoon and place it on any one of the bread slice and cover with another bread slice. (In between the bread slice, cheese spread or cheese slice or grated cheese can be placed).

Step 3 : Apply butter on the other sides of the bread before grilling on the sandwich maker. Grill till it turns golden crisp layer over the sandwich.
Serve hot with Tomato Ketchup.

Note :
  • Instead of sandwich maker, even bread can be toasted on tawa.
  • Any vegetable filling can be used for sandwich.
  • Instead of Red chilli powder/Dhaniya powder/Jeera powder, finely chopped green chillies can be used.
