Eggless vanilla cake is soft, delicious and it has moistness. This can be used as a base to make pastries, and it can be used to make pastries. More than this, it is eggless cake. Even Vegetarians and those who are allergic to egg can make and eat this cake.
This recipe is dedicate to one my close friend who is allergic to egg.
I have baked this cake several times, especially during festivals where we can't use egg on auspicious days. I had prepared strawberry jam glaze and spread it all over the cake. Strawberry jam glaze makes cake more rich and delicious. I will be sharing Fruit jam glaze recipe in my next post.
Ingredients :
All Purpose Flour / Maida – 1 1/2 Cups
Baking Powder – 1 1/4 tsp
Baking Soda – 1/2 tsp
Salt a pinch
Sugar – 3/4 cup
Oil – 1/2 cup
Yogurt / Curd – 1 cup
Vanilla Essence – 1 tsp
Method:
Step 1 : Preheat oven to 180 degree C. Oil or butter a cake pan and dust with flour and set aside.
Step 2 : Sieve all dry ingredients flour, baking soda, baking powder and salt (apart from sugar) in a plate or bowl and mix well.
Step 3 : After measuring sugar, grind sugar in to powder in a mixer grinder. This reduces the dissolving time of sugar in wet ingredients.
Step 4 : In a large mixing bowl, take curd, oil, vanilla and powdered sugar and mix well till the sugar is dissolves completely in wet ingredients.
Step 5 : Once sugar dissolves completely, then add dry ingredients mix and mix gently and at same time make sure to avoid lumps.
Step 6 : Transfer the mix to the baking pan and bake for 45 to 50 mins or until an inserted toothpick comes out clean.
Step 7 : Remove cake pan from oven and stand to room temperature. Invert on a wired or cooling rack. Once the cake cools down completely then serve with chocolate sauce or can be used to make pastry or just apply a thin layer of any fruit jam glaze.
Note : I use Micro Oven in Conventional Mode to bake Cakes/Muffins/Cookies. In OTG Oven, baking time may vary plus or minus 5 mins compare to Micro Oven - Conventional Mode.
