Capsicum bajji is easy to make and yummy to munch. Bajji is one of the popular tea time snacks and it is common road side snacks available in the evening. Now tell me, Who doesn't like to munch bajji, especially during rainy season. Everyone from kids to elders likes to eat bajji along with Tea or coffee. We can prepare bajji with different vegetables like onion, potato, capsicum, ridge gourd and even with boiled egg.
Potato Bajji
Ingredients:
Capsicum           - 4 Medium size
Oil for Deep frying

For Batter:

Gram flour         - 1.5 Cups
Rice Flour         - 1/4 Cup
Chilli Powder      - 1.5 tsp
Baking soda        - 1 tsp
Salt to taste
Water as needed

Method:

Step 1 : Wash and cut capsicum in desired shape as shown in pic. Heat oil in medium flame.

Step 2 : Add all the dry ingredients in a bowl and mix well. Before adding water to make a batter, add 1 tbsp of hot oil into it and mix it. Later add water slowly to make a smooth batter without any lumps. Batter should not be too thick or too thin.

Step 3 : Oil should not be very hot, otherwise bajji will turn brown without cooking inside. Dip each slice of capsicum so that it batter is coated well on capsicum slice and gently drop into a hot oil. Fry until they turn golden brown. Keep the flame to medium so that bajji cook evenly. Make sure to flip on both sides.

Step 4 : Drain on to the paper towel. Serve hot bajji with coconut chutney or ketchup.

Note : Adding hot oil into the dry ingredients mix makes bajji crispy. Spiciness can be increased by adding more chilli powder.
