Eggless Apple Muffin


Apple muffin is an eggless muffin prepared with stewed apple. It taste delicious if we serve warm. These muffins can be packed in kid's snacks box. Kids will love to eat as their snacks.



Ingredients :


All Purpose Flour – 1 cup
Sugar powder – 1/2 cup
Baking Powder – 1 tsp
Cinnamon Powder – 1/2 tsp
Salt a pinch
Yogurt / Curd – 1/2 cup
Apple – 1/2 cup of apple puree or 1 medium size
Oil – 1/4 cup / 60 ml


Method:


Step 1 : Preheat oven to 180 degree C. Place paper cup cake wrapper into cup cake silicon mould or apply oil over silicon cup cake mould.


Step 2 : Sieve dry ingredients: flour, sugar, cinnamon, baking powder and salt and transfer into a mixing bowl.


Step 3 : Add oil, curd and apple puree into the mixing bowl and fold gently.


Step 4 : Use an icecream scoop or spoon to scoop the batter and fill the muffin mould.


Step 5 : Bake muffins for 20 to 25 mins or until an inserted toothpick comes out clean.


Step 6 : Remove all muffin mould from oven and allow it cool before removing from mould. Taste better when serve warm by sprinkling powdered sugar on it.


Note : I use Conventional mode in Micro oven for Baking.
