Do you have any over ripen bananas at home. then don't throw it away. This banana muffins are eggless, moist and delicious muffins. Even it has nice flavor of banana.
Ingredients:
All Purpose Flour – 3/4 cup
Sugar – 1/2 cup
Baking Soda – 1/2 tsp
Baking Powder – 1/2 tsp
Ripe Banana – 1 cup mashed
Oil – 1/4 cup
Vanilla Essence – 1 tsp
Walnuts – 1/2 cup (Optional)
Method:
Step 1 : Preheat oven to 180 degree C.
Step 2 : Take banana in a wide bowl and mash them. Add sugar and oil and mix well till sugar dissolves completely.
Step 3 : Add dry ingredients flour, baking soda and baking powder. Fold gently avoiding formation of lumps.
Step 4 : Add vanilla essence and Walnuts. Fold gently. Since my kids doesn’t like to eat walnuts in cake or muffins. I have omitted adding into muffins.
Step 5 : Place paper cup cake liner into cup cake silicon mould or apply oil over silicon cup cake mould. Use a icecream scoop or any alternative to fill the cup cake moulds. Do not over fill the cupcake moulds and allow muffin to raise.
Step 6 : Bake muffins for 35 to 40 mins or until an inserted toothpick comes out clean. Remove all muffin mould from oven and allow it cool before removing from mould.
Serve warm.
Note : I use Conventional Micro oven for Baking.
