Butter Chicken Masala

Butter chicken masala is an easy and delicious, creamy and delightful chicken gravy. This is can be served along with any Indian breads like chapathi, pulka, naan or kulcha.


Ingredients: 

Chicken      – 500 gms

Oil          - 1 tbsp
Ginger       – 1.5″
Garlic       – 10 cloves
Cumin Seeds  - 1/4 tsp
Onion        - 3 medium size
Tomatoes     – 3 medium size
Soaked Cashew nuts or Almonds – 10

Butter           - 3 tbsp
Bay leaves       - 1 or 2
Onion            - 1 small in size
Red Chili powder – 4 tsp
Coriander Powder - 2 tsp
Cumin Powder     - 1/2 tsp
Salt to taste
Sugar            – 1 tsp
Kasuri methi     – 1 tsp

Fresh Cream      - 2 to 3 tbsp (Optional)

Note : Spiciness of the gravy can be vary by increasing or decreasing the quantity of red chilli powder.

Method:

Step 1 : Clean chicken and keep it aside.

Step 2 : Heat 1 tbsp of oil in a pan. Add cumin seeds. when cumin seeds crackles, add ginger, garlic, onion, tomato, and soaked cashews or almonds. Saute it for 10 minutes over medium heat or until everything is fully cooked. Allow it to cools down.

Step 3 : Once the onion-tomato mixture cools down to room temperature then grind in a blender into fine paste.

Step 4 : In a pan, heat 3 tbsp of butter. Once the butter melts, then add bay leaf and thinly sliced onion. Fry onion into golden brown. Add Chicken and fry for 3 to 4 mins. Now add salt and fry till raw smell goes away or water present in the chicken dries away and starts leaving oil.

Step 5 : Add grind onion-tomato paste into it and fry for couple of mins. Add chili powder, coriander powder and cumin powder and sugar. Mix them well and add required amount of water into it. Cook this gravy for 5 minutes over medium heat.

Step 6 : Add kasuri methi and mix well. Cover the pan with a lid and cook couple of minutes or till chicken cooks well. Slowly Add Fresh cream at the end and mix well and switch off the flame.

Garnish with coriander and serve Butter Chicken Masala with Roti, Naan, Kulcha or plain paratha. Even can be served along with white rice.
