Tender coconut kheer is a simple kheer which has fresh tender coconut flesh/pulp. This kheer is quite famous in coastal region. Condensed milk is added to enhance the taste of the kheer. Even kheer can be prepared without condensed milk.
Ingredients:
Tender coconut Flesh - 1 cup
Milk - 2 cups
Condensed Milk - 1/4 cup (Optional)
Sugar - 1/4 cup to 1/2 cup
Cardamom powder - 1/8 tsp
Method:
Step 1 : Keep milk on stove for boiling.
Step 2 : Take half of the tender coconut flesh in a blender and blend coarsely and finely chop other of the tender coconut flesh.
Step 3 : Once milk starts boiling, add coarsely blended tender coconut flesh and finely chopped tender coconut. Add condensed milk and mix well and allow to cook on low flame for couple of mins.
Step 4 : Add required amount of sugar as per the taste, cardamom powder. Mix well and switch off the stove.
Tender coconut kheer can be served hot or cold.
