Aloo Bajji


Ingredients:

Round sliced Potato - 1 Big
Oil for Deep frying

For Batter:

Gram flour - 1 Cup
Rice Flour - 2 tbsp
Chilli Powder - 1 tsp
Turmeric Powder - 1/4 tsp
Baking soda - 1/4 tsp
Salt to taste
Water as needed

Method:

Step 1 : Wash and peel the potato. Slice them in round shape and it should be thin. Dip in a water and keep aside. Meanwhile heat oil on medium flame.

Step 2 : Mix all the dry ingredients in a bowl. Before adding water into it, add 1 tbsp of hot oil into the mix and later add water slowly to make a smooth paste without any lumps. Adding hot oil before water makes bajji crispy. Batter should not be too thick or too thin.

Step 3 : Oil should not be very hot, otherwise bajji will turn brown without cooking inside. Dip each slice of potato and gently drop into a hot oil. Fry until they turn golden brown. Keep the flame to medium so that batter cook evenly.

Step 4 : Drain on to the paper towel.
Serve hot with ketchup or coconut chutney.
