Eggless Bread Pudding






Ingredients: 

Bread           - 6 slices
Milk            – 300 ml+50 ml
Sugar           - ¾ cup or to taste
Vanilla         - 1 tsp
Custard Powder  - 3 tbsp
Unsalted Butter - 2 tbsp
Dry nuts/fruits - 5 tbsp (optional)

Method:

Step 1 : Preheat the oven to 180°C.

Step 2 : Cut bread into small chunks and keep it aside.

Step 3 : Soak chopped dry nuts or dry fruits like almonds, cashew, raisins, pista in water for 10 mins and drain it. (I have skipped this step, since my kids wont like baked dry nuts).

Step 4 : Take 300ml milk in a pan and add butter into it. Heat the milk till the butter melts. Do not boil the milk.

Step 5 : In another bowl, mix custard powder and 50 ml milk, so that no lumps formed. Add vanilla, sugar into it. Now add the warm milk into it and mix well till sugar melts completely. Custard is ready.

Step 6 : Grease baking pan with butter. Arrange one layer of bread chunks in the pan and top it with dry nuts. Again arrange second layer of bread and top with dry nuts. Pour the custard over the bread. Press the bread so that it absorbs custard.

Step 7 : Keep it in the preheated oven for 45 mins or till golden layer is formed on top. Remove from oven and let it stand for 5 mins.
Serve warm with whipped cream and powdered sugar. ( I couldn’t take this step)
