Onion Cucumber Raitha

Don't you have much curds to prepare raitha for Veg or Non-veg pulav or biriyani. Then below is the simple raitha for you. It's easy to prepare and not much ingredients required. It gives thick consistency to the raitha.


 


Ingredients:

Finely chopped onion - 1/2 cup
Finely chopped cucumber - 1/2 cup
Curds - 1 cup
Salt to taste

For grinding:

Grated coconut - 2 tbsp
Ginger - 1/4 inch
Green chilli - 1/2 to 1
Coriander leaves - 5 strands

Method:

Step 1: Mix chopped cucumber, onion and salt in a bowl.

Step 2: Grind the grated coconut, ginger, green chilli and coriander leaves into a thin paste with very less water.

Step 3 : Add the coconut based paste and curds into cucumber and onion and Mix well.

Serve with any Pulao or Biriyani.

Note:

1. you can add more or less curds.

2. you can omit grinding coriander leaves. Instead of grinding, you can finely chop and mix with onion & cucumber.
