Mango Sheera

Let me celebrate my 50th post through Sweet, Mango Sheera. I have seen my mom preparing different variations of Kesari bath from childhood. In Kesari bath, sugar will be added once the rava is cooked well with water or milk. In this recipe, I have added sugar directly to the roasted rava. 



Ingredients :

Mango Pulp        - 1 cup
Ghee              - 1/2 cup
Rava/Semolina     - 1 cup
Sugar             - 1 cup
Milk              - 1 cup
Elachi powder     - 1/4 tsp
Chopped almonds and cashews - 2 tbsp
Few strands of saffron

Method:

Step 1 : In a heavy bottom Kadai, heat 2 tsp of the ghee. Fry chopped cashew nuts and almonds in it, drain and keep aside ( I have skipped this step, since my kids doesn’t like roasted nuts). Soak saffron in 2 tbsp of milk.

Step 2: In the same kadai, roast semolina till it turns golden brown or get a nice aroma of roasted rava.

Step 3: Add sugar and ghee into the semolina and mix well. When sugar starts melting(after 2 to 3 mins), add mango pulp and mix it. Later add milk and whisk well to avoid lumps. Cook for 2 to 3 mins.

Step 4 : Add kesar, elachi powder and roasted nuts into it and mix it.

Step 5: Switch off and Serve hot.Garnish with roasted nuts and saffron.

Note: If Mango is sweeter than sugar can be added less than given quantity. Elaichi powder can be omitted to get mango flavor in Sheera.
