Mango Muffins

In my last post, I had mentioned that Mango pudding will be my last Mango recipe for this season. But I got hold of three Mangoes to try out Eggless Mango Muffins. I have used one mango to bake this muffins. Everyone at home liked the flavor and taste of the Muffin. Especially my kids liked it a lot. I baked these in Microwave Oven in Conventional Mode. It can be baked in cooker but not in Microwave Mode in Microwave Oven. All purpose flour can be replaced by whole wheat flour or vice versa. Same batter can be used for preparing Mango Cake.



Ingredients:


Mango Puree               - 1 cup
Sweetened Condensed Milk  - 3/4 cup
Melted Butter             - 1/2 cup
Sugar                     - 1/4 cup
Vanilla or Mango Essence  - 1 tsp
Wheat Flour               - 1 cup
All Purpose Flour / Maida - 1/2 cup
Baking Powder             - 1 tsp
Baking Soda               - 1/2 tsp

Method:

Step 1 : Preheat oven to 180 Degree C. Spray oil or grease Muffin moulds with butter.

Step 2: Sieve all purpose flour, wheat flour, baking powder and baking soda and keep aside.

Step 3: In a mixing bowl, take melted butter, sugar, condensed milk, and essence and mix well or till sugar dissolves partially. Later add Mango puree and mix well.

Step 3: Add dry ingredients into wet ingredients and fold it gently. Scoop it into Muffin moulds.

Step 4: Bake for 20 mins. Toothpick should come out clean when it is inserted to Muffins. Remove from oven and cool for few mins. Unmould and cool it down.
