Mushroom Spinach Sandwich

Whenever I buy spinach, only one name comes to my mind is “Poppeye - The Sailor Man”. Spinach is one of wonderful green-leafy vegetable which has good nutritional, Anti-Oxidants and Anti-cancer composition. I make sure to prepare spinach recipe once in a week. 



Ingredients:

Spinach         - 2 Cup tightly packed (finely chopped)
Mushroom        - 200 gms (finely chopped)
Onion           - 1 finely chopped
Garlic          - 1 tbsp
Jeera           - 1/2 tsp
Pepper powder   - 1 tbsp
Salt to taste
Bread Slices
Butter to spread on Bread(Optional )
Cheese Spread or Cheese Slice or Grated cheese(Optional)

Method:

Step 1 : Wash Spinach and finely chop it. Microwave the spinach for 3 to 4 mins or cook for 5mins on stove. I prefer to cook spinach for 3 to 4 mins before using in sandwich.

Step 2 : Heat oil in a pan. Add jeera into it. Once it starts spluttering, add finely chopped garlic & onion and saute well.

Step 3 : Add mushroom and cook for 3 to 5 mins, until mushrooms are tender. Add salt and pepper powder and mix well. Add spinach and simmer 1 to 2 mins and Mix well.

Step 4 : Take a bread slice, apply thin layer of cheese spread on both the bread slices. In a slice of bread, spread the mix and sprinkle some cheese in the middle or place a cheese slice.

Step 5 : Pre-heat the grill for 2 to 3 mins or till the green light is On. Place it on the grill pan and grill till it turns golden crisp lines over the sandwich.

Serve with Tomato Ketchup.
