Mango cake without egg and moreover it is easy to bake. This recipe is inspired by Cook with smile, Smitha.
All purpose flour - 1 cup
Chiroti Rava - 1/2 cup
Baking Soda - 1/2 tsp
Baking powder - 1 tsp
Chopped nuts - 1/4 cup (optional, I have skipped in my cake)
Salt - 1/2 tsp
Chopped Mango - 1 to 1.5 cup
Granulated Sugar - 3/4 cup
Curd/Yogurt - 1/4 cup
Cardamom - 1/4 tsp
Hot water - 1/4 cup
Oil - 2 tbsp
Instructions :
Step 1 : Preheat the oven at 190 degree C. Grease the baking pan with butter or oil and dust some maida over it.
Step 2 : Sieve dry ingredients other than chopped nuts and transfer to a bowl.
Step 3 : In a mixer grinder, puree mango along with sugar and cardamom without water and transfer into a mixing bowl. Add curd and oil into the mixing bowl and mix well with mango and sugar puree.
Step 4 : Add dry ingredients into wet ingredients in a mixing bowl slowly. Mix until a lumps free thick batter is formed. You can mix chopped nuts into batter( Optional).
If the batter is too thick than add little amount of hot water(3 to 4 tbsp) or till batter is in the right consistency. It won’t be more than 1/4 cup of hot water.
Step 5 : Pour the batter in a greased pan. Topped with chopped nuts. Bake the cake in the preheated oven at 190 degrees c for 35 to 40 mins or till inserted tooth pick in cake comes out clean. Once the cake cools down, then remove from baking pan and slice and serve cake.
