Eggless Banana Wheat Cake

This eggless banana cake is prepared with whole wheat flour and less sugar compare to other banana cakes. Its perfect tea time cake. Thanks VegRecipesOfIndia for perfect eggless banana wheat cake.
Ingredients:

Over ripe bananas - 6 medium or 4 large size
Oil               - 2/3 cup
Sugar             - 1/2 cup
Vanilla essence   - 1 tsp

Whole wheat flour - 1.5 cups
Baking Powder     - 1 tsp
Baking Soda       - 1/2 tsp
Salt              - a pinch

Walnuts           - 1/4 cup (Optional)
Milk              - 2 to 3 tbsp (if required)


Method:
Step 1 : Preheat your oven at 180 degrees c/350 degrees f. I have microwave convection oven, just preheat the oven.


Step 2 : Peel and mash the bananas in a mixing bowl. Add sugar, oil and vanilla extract. Mix well until sugar dissolves completely in the oil and banana puree. 

Step 3 : Mix wheat flour, baking soda, baking powder, salt by sieving in a separate plate. Add them into wet mixture. Use fold and cut method to mix dry ingredients with wet ingredients.  If the batter mix is very thick, then add 2 to 3 tbsp milk. 




Step 4 : Add the chopped walnuts and fold again. (Its optional). I missed this step, since my kids doesn’t like to eat walnuts in cake. Pour the batter in a greased pan. Bake the banana cake in the preheated oven at 180 degrees c for minimum 45 mins to 50 mins or till inserted tooth pick in cake comes out clean. Once the cake cools down, then remove from baking pan and slice and serve cake.
