Broccoli Carrot Stir Fry


Broccoli Carrot Stir Fry is one of the easiest side dish for Rice and it is very healthy.

Ingredients :

Broccoli - 2 cups
Carrot - 2 cups
Thinly sliced onion - 1 cup
Oil - 1 tbsp
Jeera - 1 tsp
Green chilies - 2
Mince garlic - 1 tbsp
Salt to taste
Oregano & Pepper powder to taste (Optional)

Method :

Step 1 : Wash thoroughly and cut broccoli into small sized florets. Heat water in a large bowl till it starts boiling. Add broccoli and salt into the water and switch off the stove and leave it for sometime. Rinse with cold water and drain them.

Step 2 : Heat 1 tbsp of oil in a pan/wok, add jeera, green chillies and minced garlic into it and saute for a few seconds.

Step 3 : Add onions and saute until onions turn translucent. Add salt into it.

Step 4 : Add carrot and saute for 2 to 3 mins. Once the carrot becomes soft then add broccoli and mix well. Saute for maximum 4 to 5 mins. Add oregano and pepper for extra taste and mix well and switch off the stove.

Serve Broccoli - Carrot stir fry along with Rice-Rasam, Rasam-Rice and even with Curd Rice.

Note :

1) Broccoli cooks very fast, so do not saute for longer time. Crunchier broccoli tastes better than overcooked broccoli.

2) This recipe can only be prepared with broccoli.

3) Oregano and pepper powder gives extra aroma and taste to the recipe.
