Carrot Cake

Carrot cake is soft and moist cake with lots of grated cake and kids won't say NO to eat carrot cake.  


Ingredients :

Grated raw carrot - 1 1/4 cups

Dry - Ingredients:
All purpose flour / Maida - 1 cups
Baking soda - 1/2 tsp
Baking powder - 3/4 tsp
Salt - 1/4 tsp
Grounded cinnamon - 1/2 tsp

Wet - Ingredients:
Eggs - 2
Granulated white sugar - 3/4 cups
Vegetable refined oil - 1/2 cup
Vanilla extract or essence - 1/2 tsp

Method:

Step 1 : Preheat oven to 180 degrees C and place rack in center of oven. Spray oil to cake pan and place parchment paper at the bottom of the pan.

Step 2 : Sieve all the dry ingredients in a separate bowl and keep it aside.

Step 3 :
In another bowl, beat eggs with hand blender or electric mixer until frothy. After approximately 1 min, gradually add the sugar and beat until the batter is thick and light colored. It takes almost 3 to 4 mins. Add oil slowly and vanilla essence to it and beat till it mix well.

Step 4 : Add dry ingredients mix and beat until mixes well. Add grated carrot and fold gently.

Step 5 : Pour the mixture into the pan and bake for 35 to 40 mins or until tooth pick inserted in the center comes out clean.

Step 6 : Remove from oven and let it cool. Once it cools completely, then remove from cake and separate parchment paper from cake.
It can be served with cheese frosting.
