Ingredients:
Rava/ semolina - 1 cup
Bansi chiroti rava)
Water - 2 1/4 cup *
Onion (Big) - 1
Green chillies - 3
Mustard - 3/4 tsp
Urad dal - 1 tsp
Channa dal - 1 tblsp
Curry leaves - 1 sprig
Oil - 2 tbsp
Salt - to taste
* Water ratio can be vary. Generally 1:2.5 ratio of Rava and water will be added to upma. If we add less water, then it makes upma dry or if we add more water , then it makes upma bit gooey.
Method:
Step 1 : Heat kadai and dry roast rava in medium flame until it turns slight golden brown or roasted smell of rava wafts. Set aside. Don’t over roast the rava, hence keep the flame to medium.
Step 2 : Slice onion length wise and slit green chillies. In the same kadai, add oil and temper with mustard seeds, urad dal, channa dal. Once dal turns golden brown or roasted, then add green chillies, Curry leaves, onion into it. Fry until onion turns transulent.
Step 3: Add water and salt and bring it to boil. Add roasted rava slowly and keep on stirring for another 30 to 60 secs. Be careful, it may splutter in the beginning. Mix well. It will thicken in couple of minutes. Cover and cook for couple of minutes or rava is cooked completely.
Step 4: Garnish with coriander and serve with chutney/mixture/boondhi/raitha/curds.
Upma can be prepared by adding vegetables, avarekaalu, peas.
