Mango Pudding

Mango Pudding will be the last mango dish for this mango season from my end. When my FIL was talking about end of mango season,I immediately rushed into the kitchen to prepare mango pudding. Mango pudding can be prepared using china grass/Agar agar or Gelatine. In this recipe, I have used china grass.






Ingredients:

China grass : 25 gms
Milk : 1 Cup
Mango Pulp : 1 Cup
Sugar : 3 to 4 tbsp
Cardamom powder : pinch
Condensed Milk : 2 tbsp

Method:

Step 1 : Soak the china grass in a cup of water for 10 to 15mins

Step 2 : Puree the mango and transfer into a bowl

Step 3 : Bring the milk to a boil, add sugar and cardamom powder. Add condensed milk into the milk and simmer on low flame for 3 to 4 mins

Step 4 : Place the china grass along with the water on low heat and keep stirring till the china grass is completely dissolved. Add the china grass mixture to the milk mixture and keep stirring on low flame for 4 mins. Turn off heat and allow to slightly cool but should be warm.

Step 5 : Add the mango puree to the milk mixture and gently mix it

Step 6 : Pour the mixture into serving bowls. Place in the fridge for at least 3 to 4 hours.

Note :

  • Add sugar according to your taste bud and sweetness of the ripe mango
  • Ensure the china grass/agar agar dissolves completely before adding it to the milk
  • It can be served with mango pieces
