Ingredients :
Maida or Whole wheat flour – 1 cup
Baking soda - 1/2 tsp
Warm Water – 3/4 cup
Milk – 1/4 cup
Granulated White Sugar – 1/4 cup heaped
Vinegar – 1/2 tbsp
Butterscotch Essence – 1 tsp
Cooking Oil – 3 tbsp
Butterscotch Chips – 1/4 cup
Method :
Step 1 : In a mixing bowl, Add warm water, sugar and oil. Whisk till sugar dissolve completely.
Step 2 : Add essence and milk and mix well. Now add vinegar and set aside.
Step 3 : Sieve flour, baking soda. Now add sieved flour mixture into wet ingredients and whisk till it forms a smooth creamy batter to avoid lumps. Coat the butterscotch chips with a tsp of flour. Add the butterscotch chips, mix gently.
Step 4 : Preheat oven at 180 deg C. Place paper cup cake liner into cup cake silicon mould or apply oil over silicon cup cake mould. Use a icecream scoop or any alternative to fill the cup cake moulds. Do not over fill the cupcake moulds and allow muffin to raise. Bake muffins for 35 to 40 mins or until an inserted toothpick comes out clean. Remove all muffin mould from oven and allow it cool before removing from mould.
Serve warm.
