Ada Kheer is type of a kheer from kerala, prepared with milk and ready made rice ada. I hardly tasted once or twice at my friend's house. It tastes delicious and can be served hot or cold. In this recipe, I have added custard powder to give a twist in kheer and custard powder will give nice taste and texture to the kheer.
Ingredients:
Ada / Rice ada - 1/4 cup
Milk - 3/4 ltr + 1/4 ltr
Custard powder - 1 tbsp
Sugar - 1/2 cup
Cardamom - 1/4 tsp
Cashew nuts - 2 tbsp
Ghee - 1 tsp
Method:
Step 1 : Take rice ada in a bowl. Wash and drain the water from rice ada.
Step 2 : Boil a cup of water and soak the rice ada in a boiled water. Keep it for 15 mins.
Step 3 : Keep milk for boiling. Roast cashew nuts in ghee until it turns golden and keep it aside. Mix 1 tbsp of custard powder in 1/4 cup of room temp milk and make a paste without lumps.
Step 4 : Once the milk starts boiling, add soaked ad drained ada. Continue boiling/heating milk over a medium flame. Stir in between to avoid burning at the bottom.
Step 5 : Once the ada cooks well and milk turns creamy then add custard paste to it stir well. After a min or 2 mins, add sugar and cardamom powder and mix well till sugar dissolved completely. Cook for another 2 to 3 mins.
Step 6 : Add roasted cashews into the kheer.
Kheer is ready to serve. Ada Kheer can be served hot or cold.
Note : Ada kheer thickens after sometimes. Hence more milk can be added into it. Instead of 3/4 ltr, 1/4 ltr can be used in the kheer.
Adding custard powder is optional. It gives nice taste to the kheer.
