Varkhi Halwa


Varki is a kind of Biscuit/Snack which is famous in Ooty. It is easily available in Roadside Tea shops in Ooty. Its a must buy when you visit Ooty along with Home Made Chocolate. We prepare Varki Halwa/Sweet at home during festivals and even in Functions ( Especially Non-Veg functions like Bheegaroota). Varki, itself has ghee and bit sweetness so you can add less ghee and sugar while preparing this halwa.


Ingredients:

Powdered Varkhi -1 Cup
Milk - 2 Cup
Sugar -3/4 Cup
Ghee - 3 tbsp
Cashew and Raisins -2 tbsp
Kesar -10 strands
Cardamom powder - 1/4 tsp

Method:

Step 1 : Keep the Milk on Stove for Boiling

Step 2 : Roast the Cashew nuts and Raisins in 1 tbsp of Ghee

Step 3 :  Soak the Kesar strands in the 2tbsp of luke warm milk

Step 4 : Once the Milk starts boiling, then add Varki into it and simmer the flame

Step 5 : Cook for another 5mins or until milk get absorbed completely and later add sugar,1tbsp Ghee and Soaked kesar into it and mix well

Step 6 :Let this cook until halwa gets thickened. It will take hardly 5mins.

Step 7 : Now add fried nuts and mix well. Switch off and serve hot

Step wise Pics:

1) Keep the Milk on Stove for Boiling

3) Take Varkhi in a Bowl

4) Crush all the Varkhi

5) Once the Milk starts boiling, then add Varki into it and simmer the flame. Cook for another 5mins or until milk get absorbed completely and later add sugar, 1tbsp Ghee and Soaked kesar into it and mix well.


6) Now add fried nuts and mix well. Switch off and serve hot
