Methi Dal Khichadi

Dal khichadi is one pot meal, prepared mainly with lentils and rice and it is simple, easiest, tasty and healthy rice dish. This can be served to kids, adults, healthy person and even to the person who is not well. By adding methi into dal khichadi will add more nutritious value to this dish. 



Ingredients:

Rice             - 1 Cup
Moong Dal        - 1/4 Cup
Toor Dal         - 1/4 Cup
Methi leaves     - 1 Cup tightly packed
Coriander leaves - 1 Cup tightly packed
Ghee/Oil         - 3 tbsp
Cumin seeds      - 1/2 tsp
Bay leaf         - 1
Green chillies   - 1 (finely chopped)
Ginger-Garlic paste - 1 tbsp
Onion            - 1 large
Tomato           - 1 large
Turmeric powder  - 1/4 tsp
Chilli powder    - 1/2 tbsp
Salt to taste

Note :
1) Proportion of rice : water is 1:3
2) Proportion of Rice : Dal is 2:1.
3) Only Moong dal can be used for preparing dal khichadi. But I use both Moong dal and Toor dal for Dal khichadi.

Method:

Step 1 : Wash Rice and Dal together with water for 2 to 3 times. Soak in water for 30 mins. 

Step 2 : Heat ghee or oil in a pressure cooker. Add bay leaf and cumin seeds into it. Once cumin seeds starts spluttering then add finely chopped onion and saute till onion turns translucent.

Step 3 : Once Onion turns translucent, then add turmeric powder, ginger and garlic paste and saute for 1 min. Now add finely chopped methi leaves and coriander leaves and saute for 1 to 2 mins and add tomato into it. Saute tomato till turns soft. Add red chilli powder and saute for a min.

Step 4 : Measure water and add into the cooker. Now add salt as per your taste and mix well. Close the pressure cooker with lid and keep it on medium flame and cook dal khichadi for 3 to 4 whistles. Switch off the stove after 3 to 4 whistles and wait till pressure releases from cooker naturally. 

Step 5 : If the khichadi becomes thick, then add required amount of water into it and mix well to get the right consistency. Keep on low flame for couple of minutes and keep stirring in between. 

Step 6 : Once the dal khichadi is cooked then top it with desi ghee while serving. It can be served along with raitha (Optional). 

Note : Consistency of water can be adjusted as per our choice by adding less or more water. I prefer dal khichadi to be thin consistency.
