Dragon chicken is Indo-Chinese cuisine, where chicken stripes are marinated, fried and sauteed in a sweet, tangy and spicy sauce.
Ingredients:
Boneless Chicken – 500 grams
Oil for Deep frying
Finely chopped Spring Onion for garnishing (Optional)
For Marination:
All Purpose Flour – 1/2 cup
Corn Flour – 1/4 cup
Egg – 1
Ginger Garlic Paste – 1 tbsp
Red Chilli Sauce – 1 tbsp
Dark Soya Sauce – 2 tsp
Pepper – 1 tsp
Salt to taste
For Sauce:
Oil – 1 to 2 tbsp
Dry Red Chilli – 2
Cashews – 4 tbsp
Onion – 1 (thinly sliced)
Capsicum – 1 (thinly sliced)
Ginger Garlic Paste – 1 tbsp
Tomato Ketchup – 1/4 cup
Red Chilli Sauce – 1 tbsp
Dark Soya sauce – 1 tbsp
Sugar – 1 tbsp
Salt to taste
Note : Chicken wings can be used to prepare dragon chicken instead of boneless chicken.
Method:
Step 1 : Cut chicken into strips. Chicken pieces were already cut in the chicken shop, hence chicken pieces are in different shapes.
Step 2 : Take chicken in a wide mixing bowl and add all the ingredients mentioned under marination. Mix well and marinate for 15 to 30 mins.
Step 3 : Heat oil in a pan for deep frying. Once the oil is hot, then fry chicken in oil until it turns golden brown. Drain and set aside.
Step 4 : Heat 1 to 2 tbsp oil in a frying pan or wok. Add dry red chilli and cashews and fry till the cashew turn golden. (I had forgot to add cashews at this step and later added into it). Add thinly sliced Onions and capsicum and fry for 1 min or 2 on high flame.
Step 5 : Add Ginger and garlic paste and saute for a min. Add tomato sauce, red chilli sauce, soy sauce, sugar and salt. Mix well and saute for 2 to 3 mins on medium flame. Add fried chicken and toss in a sauce.
Garnish with finely chopped spring onions and Serve hot.
